Since May, I’ve been trying to lose the extra weight I’ve gained from my idiopathic angioedema — 10 pounds. Of course, I’d gained five before that, but I’d been a little too thin. Anyway, goal weight, 135. Weight today, 140.4. Considering I yo-yo up and down between 135 and 145 — and have since HS — I decided to work a little harder this time to make exercise an enjoyable habit and cut out the junk food cycle that I seem to fall into.

Today was a good day. I ate good food that I wanted to eat, I didn’t overeat and I swam laps with Mayera for about an hour after work. I felt positive all day, not negative.

Dinner, a little too late in the day, was ah-mazing.

I started with decidedly simple ingredients:

An acorn squash and apple and this recipe from Allrecipes gave me the idea.

Voila! Behold the magic of my dinner:

Acorn squash stuffed with apples and pecans and brown sugar, cinnamon and nutmeg. Like dessert, but with lots of veggies and fruits! I love fall. And it’s finally cold enough that I might get to wear the cute herringbone-pattern coat I bought a couple weeks ago.

    I practically did a double-take to make sure I didn’t somehow post this in my sleep. Acorn squash for dinner here as well!
