I made pickled onions with this recipe. It’s so easy — it takes maybe 10 minutes, including time to find the jars. Chop, dump, stuff in some cilantro, wait a day, and you’ve got a topping for tacos, soup or salad!

My mom makes pickled fridge cucumbers much the same way! I think you’d really like her recipe, so now I’ll have to get it from her and post it for you and the world to try.
Do it! We made some a while ago. I went wayyy overboard with the garlic. Whoops! I was going for Claussen-like ones, but I think I should’ve added more dill, not garlic.
